Egg Tacos Deluxe – Breakfast Tacos for Dinner

Breakfast tacos, Austin-styleI have two adult daughters, both of whom live in Austin. I try to visit as often as I can. It always seems like our visits revolve around food… generally Tex Mex kind of food, because that’s what they eat, more often than not. When they first moved there, it was the design your own burritos at a place called FreeBirds. Later, it was Texas beef brisket barbecue at Rudy’s and other places. We’ve also had good Texas steak at a few different locations.

But lately, what my girls have adopted as a regular habit is what they call breakfast tacos. We have something similar here in Boise that we call breakfast burritos, but the Texas variety is definitely better! The place they go to the most makes their own tortillas and are they ever good… and fresh, of course.

So anyway, I was thrilled recently when one of my readers added a recipe for egg tacos on the site. Perfect!

Vegetable Frittatas – Egg Recipe for Dinner

I frequently make vegetable frittatas for dinner. The recipe I use is super easy to adapt to your tastes and get on the table in less than 30 minutes. I guarantee that with this veggie frittata recipe, you’re going to start loving having eggs for dinner every week or so, just like me!

My specialty is vegetable frittatasThis truly is such an easy recipe for anyone to make… and it goes together in a snap. There is no limit to the variations, dependent only on what you have on hand at any given moment, as long as that includes eggs and a few vegetables.

We find the basic recipe is usually enough for us, but you can also make it with some chopped breakfast sausage, bacon or ham if you want more protein. Pair it with some homemade muffins or toast and you’ll surely have a complete meal that will satisfy even the heartiest appetite.

You might also want to serve your eggs with some salsa… It’s totally up to you! YOU are in the driver’s seat.

Chicken Veggie Lasagna

Chicken Veggie Lasagna

Do you like lasagna as much as I do? Mmm… hearty goodness, Italian-style! But let’s face it… traditional lasagna isn’t necessarily the healthiest meal around, no matter how great it tastes. In fact, my mom, never known for her tact, said to me yesterday afternoon when she heard I was making lasagna… “Wow… I’m surprised you’re making that… it’s not very healthy!”

My response was that THIS lasagna recipe was going to be healthy… and low fat. It was also thrown together, since I made it by using up foods I had on hand, without a set recipe. I’d had some ground chicken in the freezer for a while, along with some eggplant, so I thought why not combine them for a new take on lasagna?

Husband Hash

Husband Hash

Who says a husband can’t make quick, easy and delicious meals too? My husband can! Egg meals for dinner are his specialty… well that, and primavera style pasta… so recently on a grocery shopping night, he volunteered to whip up a new thrown together egg recipe, using up some cooked potatoes we had in the fridge for another meal.

The result? Husband Hash!

It wasn’t the prettiest meal, but we all thought it tasted darn good. You can find the recipe for Husband Hash here on the main site.

Easy Scrambled Egg Sandwiches

Scrambled Egg Muffin SandwichYou know those scrambled egg sandwiches they serve at fast food restaurants? This is similar, but healthier. And it goes together in a jiffy!

I actually started making this sandwich as a hot lunch at work many years ago, using nothing more than a microwave and a toaster. But it would make a great dinner too, and could have a number of variations. So, here’s the recipe:

 

Easy Scrambled Egg Sandwich

Ingredients:

  • 1 egg
  • Dash of milk
  • Salt & pepper to taste
  • 1 English muffin
  • Butter
  • Slice of American cheese
  • Slice of deli ham

Directions:

1. First, split the English muffin with a fork and put it in the toaster to toast up.

2. Meanwhile, mix the eggs, milk and salt & pepper with a wisk.

3. Start heating a small frying pan sprayed with nonstick spray.

4. Pour in the eggs and stir frequently to make scrambled eggs.

5. When the muffin is done toasting, spread it lightly with butter.

6. When the eggs are done, spread them evenly across the muffin and top with a slice of ham and then cheese.

7. Add the muffing top & start eating!

This really is a quick easy meal that can be whipped up in mere minutes. You might serve it with fried potatoes or frozen tater tots if you feel you need an accompaniment. For some great variations, visit this page. And you can also get more great egg recipes for dinner at our main site too.
